ABV Pesto

Jar of Pesto

This delicious recipe keeps in the fridge for a week and freezes well. Freeze in ice cube trays for single portions. So easy. So resourceful. So good.

INGREDIENTS

  • 6 oz fresh spinach
  • 1 cup walnuts or pine nuts
  • 1 tbsp lemon juice
  • 2 tbsp ABV
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 3/4 to 1 cup olive oil
  • salt and pepper to taste

INSTRUCTIONS

1. Combine the spinach, nuts, lemon juice, ABV, oregano and thyme in a food processor. Puree.

2. Pour in the oil and continue to puree until thick, season with salt and pepper to tase.

3. Serve on toast, pizza, or pasta; you can also use it as a dip! Enjoy
